Crumbed Humpty Doo Barramundi bites

A light mid-week meal the family will love, or finger food when entertaining guests. Our Humpty Doo Barramundi fish cake recipe is healthy and nutritious.

Ingredients 

360 gm skinless Humpty Doo Barramundi fillets
1/3 cup plain flour
1/3 cup panko bread crumbs
1 egg, beaten
Vegetable oil

Instructions

  1. Heat approx. 1 cm of oil in a shallow frying pan over medium heat
  2. Cut Barramundi into bite-sized pieces (approx. size of 50 cent piece)
  3. Toss pieces in flour, shake off excess
  4. Dip pieces in egg, then toss in panko crumbs to coat
  5. Place crumbed pieces in the hot oil and shallow fry until golden, approx. 3 minutes
  6. Gently turn and cook the other side until golden and cooked through
  7. Remove pieces from pan and drain on paper towel for 30 seconds
  8. Repeat with remaining pieces of Barramundi
  9. Serve with a dash of tartare and sweet chilli sauce and your favourite side dish

Tip: got a gluten-free friend? Swap the flour and panko crumbs for gluten-free versions of the same. You can find them in the health food aisle at your nearest supermarket.
