Crumbed Humpty Doo Barramundi bites

gm skinless Humpty Doo Barramundi fillets
1/3
cup plain flour
1/3
cup panko bread crumbs
1
egg, beaten
Vegetable oil
Instructions
- Heat approx. 1 cm of oil in a shallow frying pan over medium heat
- Cut Barramundi into bite-sized pieces (approx. size of 50 cent piece)
- Toss pieces in flour, shake off excess
- Dip pieces in egg, then toss in panko crumbs to coat
- Place crumbed pieces in the hot oil and shallow fry until golden, approx. 3 minutes
- Gently turn and cook the other side until golden and cooked through
- Remove pieces from pan and drain on paper towel for 30 seconds
- Repeat with remaining pieces of Barramundi
- Serve with a dash of tartare and sweet chilli sauce and your favourite side dish
