gm skinless Humpty Doo Barramundi fillets
1/3
cup plain flour
1/3
cup panko bread crumbs
1
egg, beaten
Vegetable oil
Instructions
Heat approx. 1 cm of oil in a shallow frying pan over medium heat
Cut Barramundi into bite-sized pieces (approx. size of 50 cent piece)
Toss pieces in flour, shake off excess
Dip pieces in egg, then toss in panko crumbs to coat
Place crumbed pieces in the hot oil and shallow fry until golden, approx. 3 minutes
Gently turn and cook the other side until golden and cooked through
Remove pieces from pan and drain on paper towel for 30 seconds
Repeat with remaining pieces of Barramundi
Serve with a dash of tartare and sweet chilli sauce and your favourite side dish
